Quick Cooking – stirr fry – Candida diet

This is something that I happen to struggle with
myself, especially since my husband has candida too. This means that I’m
cooking for all of us (which I’d be doing anyway, obviously), but the
fresh food does take longer to prepare.

See, for me, stir fries aren’t necessarily “quick”. There’s all that
chopping and slicing, and then I’ve got to wait ’til things cook to the
consistency that I like. I understand that some people can save time by
purchasing veggies and meat that are already cubed or chopped, but our
food budget doesn’t allow us to pay for that kind of convenience.

Probably the quickest things that I make around here are:

- eggs (fried or scrambled (takes maybe 5 minutes)
- baked fish (takes about 17 minutes including prep)
- grilled beef (takes as little as 10 minutes because I like mine rare)
- egg drink (1 egg, 1T butter, 1T coconut oil, pinch of stevia, 1c water, takes
less than 5 minutes)

Now, if I’ve got left-overs, that can be a God-send (although some candida
sufferers are sensitive to left-overs.) Often, we’ll fix a pork loin or a
beef roast, and then I can pull a slice of cold meat out of the fridge and
eat it straight away. That’s presuming that the meat’s in the fridge to
begin with though. :)

I’d be interested to hear what others are doing for “quick” food.
